Pete! Eating on dialysis is really a mixed bag. Though I have no research based sources I have done a fair bit of traveling and very unit is different. I can really understand it for people unkown to the staff because eating more than two hours into a run often caused crashing. Some units though if you are stable and have no problems let you both eat and drink. I find that I am ravenous post dialysis and need to eat before and like to have a snack during, popcorn is my choice and about 200ml of fluid, usually ice, factored in.
Perhaps the research will be more unit by unity based and we shoud encourage a forma study to take place. This would help those that would like to eat on units that do not allow it.

Please refer to the April 2001 Journal of Renal Nutrition when it comes out (Effects of Calorie and Fluid Intake on Adverse Events during Hemodialysis). I did some research in our unit and we found that patients who ate more than 200 kcal and/or 200cc fluid had an increased incidence of hypotensive events and increased use of Mannitol. We currently allow our patients to eat or drink on dialysis as long as demonstrate stability doing so.
