April 10, 2002 - The National Kidney Foundation (NKF) has published a cookbook for dialysis patients on their web site:

Living Well on Dialysis: A Cookbook for Patients and Their Families

The cookbook includes 82 recipes for appetizers, breakfast, soups/salads, meat/chicken/fish entrees, rice/pasta/stuffing, vegatables, breads, and desserts.

The NKF has also published their "Dining Out With Confidence" brochure on their web site.
